Hugs. You don’t need to apologize for taking time off! Lord, who doesn’t need to from time to time? Thanks for the recipe, the check in, and the picture of two Very Good Doggos.

You know they're only being good in the hopes of getting some shortbread.

I only got as far as the cataracts. If at all possible, dump those guys. I had cataracts. My doctor ❤ removed them asap. 99 percent painless. No more fog. I could see stars again ✨.

I just read the whole article. I now assume that you do not live in the U.S and that you may be locked into the doctors you have. My apologies 😕. Absolutely loved the dogs 🐕 ❤

Not really, I can get a second opinion - and I plan to. My long term opthamology consultant was not the one who gave me this opinion so I've asked for an appointment with him. He's going to be a lot more aware of my ongoing sight issues and my concerns about further sight deterioration.

To be fair to the last consultant I saw, my sight problems are a lot more complicated than just cataracts, and he was concerned about the relatively small (something like 1 in 100) chance of the cataract surgery failing and leaving me with even worse problems. He also cited my Diabetes as a concern.

I'm glad your situation isn't as dire as I suspected 😁. Hopefully all turns out well.

What is a fan oven?

Expand full comment
author

It's an oven with a built in fan which evenly distributes the heat. Very useful as it removes the need to use a specific shelf in the oven in order to properly cook food, therefore enabling you to cook multiple items which would otherwise need to be cooked on the top shelf.

Ohhh that sounds great 😊 have to look into that’s. Does the temp stay the same?

Once it hits the temperature it is set at it will remain at that temperature unless you open the door or adjust the temperature setting.

Fan ovens have been a thing in the UK for most of my lifetime.

In the U.S it's called a convection oven.

Forgot to add - thanks for the pic of Loki and Valkyrie, they are adorable.

They know it too, and are not afraid to use that adorableness for devious purposes.

I am going to save this recipe for my youngest daughter, the baker. Daddy and I are hoping to visit this Christmas, but we will see. She would have all of the equipment needed, and most of the ingredients. What she doesn't have, she would know where to get.

Hope that you can have the cataract surgery soon. I don't understand why they won't do it now. Can the other thing be fixed at the same time? My brother had cataract surgery a year and a half ago, He had something else going on with his eyes, I should remember what, but I don't. They fixed that at the same time.

The other stuff is unfixable. There is no way to recover the peripheral vision I've lost, and the eye that has no vision at all is by choice as I have optical nerve damage in that eye which has left my vision like looking through a heavily condensed window, it's so bad that it affects my balance and causes migraines. As they've not yet discovered how to repair the optic nerve, I just have to live with it. When I last had a retinal bleed in that eye (about 2-3 years ago) I asked that they leave it alone rather than clearing the blood, as I actually cope better with only one functional eye.

I hope your daughter gets some good use out of the recipe, the best thing is you can incorporate other things into it, chocolate chips are good, as is a bit of dried lavender, or even rose petals. It's a fantastic recipe to adapt to your own tastes.

My favorite food was Mom’s chicken kourma. She stopped making it about twenty years ago, when my parents adopted Hare Krishna’s dietary restrictions, which excludes meat. She didn’t really “measure” or have written recipes, so my brother has had to reverse-engineer a few things. But that wasn’t one of them.

When I accompanied her to India back in October for her brother’s memorial, while we were there, the Aunties made their version. They hadn’t made that for me in years either, because I was always with Dad and it would have been offensive to serve it while he was there. But it was good! It wasn’t quite the same as Mom’s but it was close.

Alas, they’re no better with measurements, so I couldn’t get their recipe either. And so, Mom took her secrets with her when she passed two weeks ago.

That's a shame, I find enjoying the recipes I associate with people I loved makes me feel closer to them. If you decide to try to recreate your mom's old recipe then I wish you the best of luck, I know curry recipes vary from family to family so recreating a lost recipe can be incredibly difficult.

Thanks for the new recipe! And also for sharing your health updates. Somehow hearing from someone else dealing with complicated health issues that can’t be neatly solved makes me feel less alone. I hope you get some downtime to just enjoy the good parts of your health. I tried the adjustments you recommended to the traditional crumble recipe and it came out delicious! Is it possible to sub white whole wheat flour one to one in your recipe? Or may I request whole wheat flour recipes? I have a ton at home I bought to make bread but I haven’t had the energy to do that in a while.

Expand full comment

You should be OK to sub for wholewheat. Try 1-1, I think it should work fine, but if it's a little dry the just drop the amount by maybe 10 g.

I figure the health thing is at least partially self inflicted so I've just got to learn to live with it. I'm determined to not let it stop my from still doing the things I love though, I've just got to be prepared to adjust my expectations and allow myself to go at a pace that suits me, take regular breaks, and, most importantly but usually the hardest thing to do, ask for help when I need it.
